My Healthy Pasta Recipe

Alright loves, I’m back with another Honeybee Health recipe for ya! You all know I am always here for an easy and healthy meal in a hurry so today I’m sharing my healthier take on pasta. I was getting burnt out of heavy meat sauce so decided to switch things up with a more Mediterranean style packed with healthy fats, veggies and protein that you won’t feel guilty eating!

First let me just say that I have never been a measure-it-out kind of gal. I’m all about using what I have on hand and adjusting the recipe to taste. So if you’re okay with that….read on!

What You’ll Need:

Garlic (fresh or minced in a jar)

Olive Oil

an Onion

Sea Salt

Olives (I prefer the big fatty ones from the Olive Bar at our local grocery but you can get the jar option as well)

Sun-dried Tomatoes (jarred or I prefer the marinated ones from the self serve section from Whole Foods)

A large bunch of Kale

Organic Chicken Breast

Pasta of your choosing

 One Jar of Pasta Sauce (only if you prefer a red sauce- I made mine only with olive oil, garlic and onions)

….and a glass of wine if you’re like me and cooking is just so much better with a glass of your favorite vino in hand 😉

 

Directions…

This recipe is super simple and pretty straight forward. I am all about one-pot meals and this one is almost that. First I like to cook up the chicken. I add a good amount of olive, garlic and onions to my pan and saute for a couple minutes. Next I add in the chicken and add sea salt. Once the chicken is cooked thoroughly, I put on my pasta to boil.

While the pasta is boiling I de-stem my kale (the more the better in my opinion!) and toss it in with the chicken along with my olives and sun-dried tomatoes. I leave it on low for 3-5 minutes until the pasta is ready to be added in. I like to take the pasta and add into the pan and mix it all together. Lastly, I add on a little fresh grated parmesan and you’re done! It’s SUPER easy, tasty, and nice change up the hubby always appreciates!
