Spaghetti squash

Have you ladies spaghetti squashed? 😉 It’s something I’ve always loved whenever i’m out to eat but was always a little intimated to make at home. If you’re looking to cut calories this is a great option for you! There’s only about 40 calories per cup compared to pasta which has about 200. The best part is it tastes great and I honestly didn’t miss the noodles either! I picked one up from Trader Joe’s last week and they make it so easy for you with the cooking instructions right on the squash! 

It really is pretty simple to make! The hardest part was cutting this sucker 😉 Preheat your oven to 350. Cut this baby in half and scrape out the seeds (think pumpkin carving).

 Place it in a baking dish, drizzle with a little olive oil and sea salt and bake for 40 mins. You can tell the squash is done when the sides of shell become softer.
Once its out of the oven just take your fork and start scraping the sides and it will start to look just like spaghetti! Top with your favorite sauce! (I make mine with garlic, olive oil, extra lean ground beef and a jar of Ragu garden vegetable spaghetti sauce).
and viola! Super easy and healthy dinner!

  1. I made spaghetti squash the other night, and it was a huge hit. The trick with the skin, microwave it (whole) for 3-5 min. Wait for it to cool so you can cut into it. Should be a little softer to slice. The first time I cut into our massive squash, I made my husband do it. My hands & toes were tingling watching him manage it.

  3. Spaghetti Squash is one of my favorites! I typically prepare exactly to your specifications above BUT my oven wasn't working the other night so I microwaved it in a glass dish (1/2 at a time) and it was done in half the time! Worth trying on those nights when you don't have time! XO

  6. I finally made this recipe tonight!!! …but I have to tell you, considerable disparities existed in the quality of presentations (mine vs. yours) . Your spaghetti squash looks so presentable. Omg, if you say how mine tuned out, you's be dying from laughter. My version looked a hot mess, but it compensated for its sloppiness in great taste. Thanks again for another great meal inspiration. Honestly, I always check your blog when I'm stumped in regards to making dinner. Keep 'em coming beautiful 😉

    P.S. Whenever I cook something new, my fiance asks where the complex carbs are, and asks "is this from that bumblebee blog you like so much?" Lol. He's getting used to it, but I'm sure he'd rather have buffalo wings all day, everyday. Oy, men!

  7. Does anyone have any tricks for cutting the spaghetti squash in half. There's got to be an easier way. My husband tried to use the electric knife – which didn't even put a dent in the squash. haha

  8. Instead of slicing, stab like 5 holes on each side with a sharp knife and put the whole thing in the oven then slice open when it is done baking. Soooooooo much easier 😉

  9. I rather west indie pumpkin since I was raised with that. I tried the spaghetti squash and I was nausea for days. It messed my stomach up bad. As I type I am feeling nauseasthinking about it. My boyfriend was ok with it. But I envy those of you who can enjoy it.

  10. I have love spaghetti squash since I was a little girl. But I have been having weird issues with it as I've gotten older. Everytime I eat it, it tastes fabulous and comes out great… then a few hours later I'm suffering from nausea like you woudn't believe! I thought it was a fluke but now it has occured on 5 separate occasions. Has anyone ever heard of this? I can't find any info online about people reacting this way to spaghetti squash that actually likes this vegetable?!

    1. I love this vegetable but unfortunately it does the same thing to me – I feel incredibly nauseous after eating it every time 🙁 Wish this wasn’t the case because its so good !
